Sponge & Cream Bakery (Brixton)

• Sponge and cream is nestled within Brixton market but what it lacks in space and atmosphere
• The hospitality was second to none and I had a great lesson on making fondant decorations with a Halloween theme
• The surroundings are slightly odd but I rather like that
• A quirky place with cakes to die
• In conjunction with National Cupcake Week
• I was super excited knowing that we were going to decorate cupcakes
• Sponge and Cream is run by Paulina
• The shop is a kitchen in itself which is pretty cool
• Where Paulina (previous Head Baker at Hummingbird Bakery) warmly welcomed us with open arms and an army of beautiful cakes in her dainty kitchen
• It was moist without being too sweet and was also gluten and wheat free
• It was made with butternut squash
• The description had me going gaga and it was a mystery that half the cake wasn't stolen away that evening
• Then showered generously with desiccated coconut
• We all tried to replicate with such concentration
• Owner and former Hummingbird head baker Paulina Byrne welcomed us into her charming kitchen in Brixton Market with a combo that sat firmly within the 'treat' spectrum of trick or treat
• Another childhood fave (I sense a theme of regression here) which was at once moist and rich
